There are honeys, and there are honeys. If you've ever tasted ours and noticed it tastes different from the supermarket's, it's no coincidence. There are very specific reasons for this, and today we're sharing them with you.
1. The flora of our mountains is unique
The Sierra del Sur is a privileged ecosystem. Here, plants like thyme, rosemary, lavender, French lavender, rockrose, and holm oak grow wild. Our bees forage these flowers without anyone having planted or treated them with pesticides. The result is a pure nectar, full of aromas and nuances that change according to the time of year and the area of the mountains where the beehives are located.
That's why our spring honey doesn't taste the same as our summer honey, and the honey from the beehives in the north of the mountains has a different touch than those in the south. Each jar is unique.
2. We don't heat it
Most industrial honeys are heated to high temperatures to make them more liquid and easier to bottle. The problem is that this heat destroys enzymes, antioxidants, and much of the aroma. Our honey never exceeds 40°C (104°F), the natural temperature of the beehive. This way, it retains all its properties and that characteristic color and texture.
3. We harvest it when it's ready, not when it's convenient
In the industry, timelines are dictated by the market. In our family, timelines are dictated by the bees. We only open the beehives when the combs are completely capped, meaning sealed with wax by the bees themselves. This is the only guarantee that the honey has the correct moisture content and will not ferment.

4. We know each beehive by name
We have hundreds of beehives spread across different parts of the mountains, and each one has its own character. We know which ones are more productive in spring, which ones have the strongest queens, and which ones produce the darkest and most intense honey. This accumulated knowledge over decades is what allows us to always offer you the best.

Our honey tastes different because it comes from a different place, made by free bees in pure mountains, and cared for by people who have been doing it with passion their whole lives. There's no other secret to it.
